Brodetto alla Sambenedettese is a popular and typical local recipe whose roots go back as far as fishermen have existed!
During the whole day spent at sea, for the fishermen of San Benedetto del Tronto, it was their only source of livelihood and was cooked on board the boats.
For the preparation they used ‘waste’ fish, which could not be sold due to their low quantity, economic value and, above all, quality.
Over the years, the recipe for this seafood speciality has become national and has undergone considerable modifications and variations on the theme, but the original Brodetto Sambenedettese is prepared in a wide and fairly deep pot, using firm-fleshed fish such as Mazzolina, Vocca in Capo, Coda di Rospo, Scorfano, Ragno and Triglia and soft-fleshed fish such as Razza Chiodata, Palombo, Merluzzo, Gattuccio and Seppie. All seasoned with oil, onion, tomato, pepper, white wine vinegar and water.
